Making healthy meals for your family shouldn’t leave you feeling drained. Some people just don’t like vegetables. And getting kids to eat vegetables has been an ongoing battle, possibly since the beginning of time. And if you have a picky eater at home, getting your child to actually consume the food you prepare at home can be a huge challenge. On top of that, health-conscious parents who cook the majority of their family meals at home are rivaled by school “pizza days,” fast food restaurants, candy fundraisers, and junk food marketing that speaks directly to kids.
And when children start to refuse the healthier options being offered at home, your inclination might be to throw in the towel and go with the flow so at least your child will eat “something.” But don’t give up! So keep veggies crisp and attractive by skipping the steamer and putting them on a stick! The kids will enjoy the colorful display of various vegetables and you’ll be surprised how fast they disappear (into their tummies).

This is such a simple side to prepare using a baking sheet. Just gather an assortment of veggies, drizzle with a little balsamic vinegar, spray a bit of organic olive oil, and stick them in the oven for approx 30 minutes.

This is a combo that’s easy to whip up and the kids will enjoy dipping veggies into the hummus. Try slicing up carrot sticks, celery, broccoli, or grape tomatoes and arrange everything on a plate for a snack those little fingers will love. The added bonus? Hummus – with chickpeas as the main ingredient – is a great source of protein to balance this out as a healthy snack.
